1. Scalloped Potato Casserole 

Scalloped potatoes are a creamy luxury recipe which will always be the first to go at your dinners. Top with extra cheese and they will get devoured even faster.

Ingredients

  • 3 pounds of potatoes (thinly sliced)
  • 1/2 onion (thinly sliced)
  • 9 tablespoons all-purpose flour (divided)
  • 6 tablespoons butter (diced and divided)
  • salt and ground black pepper to taste
  • 3 cups whole milk, or as needed

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Thoroughly grease a 9×13-inch baking dish with either butter or cooking spray.
  2. Thinly slice potatoes and onion and pat dry. Dice the butter and split it into three portions. Cover the bottom of the baking dish with a layer of potatoes and top with 1/3 of the onions.
  3. Sprinkle three tablespoons of flour evenly over the potatoes and onions. Distribute 1/3 of the diced butter over the flour evenly. Repeat these layers twice more.
  4. Gently heat the milk on the stove until warmed through. Carefully pour the milk into the dish, to cover the potatoes and onions. It should fill the dish to the top of the potatoes.
  5. Bake, covered in foil, for 45 minutes. Remove the foil and bake for a further 10 to 15 minutes, until the potatoes are fork-tender.

2. Hash Brown Chicken Casserole

This Hash Brown Chicken Casserole uses crispy but tender shredded potatoes and is an easy and healthy dinner option.

Ingredients

  • 1 bag of frozen hash browns slightly thawed
  • 1 Rotisserie Chicken, shredded (2-3 cups)
  • 2 cups cheddar cheese, shredded
  • 2 cups frozen mixed veggies
  • 1 can cream of chicken condensed soup
  • 1 cup milk
  • 1 tsp. thyme, fresh
  • 1/2 tsp. salt
  • 2 cups corn flakes

Instructions

  1. Preheat the oven to 400° F. In a large bowl, mix the hash browns, shredded chicken, cheese, mixed veggies, cream of chicken, milk, thyme and salt.
  2. Pour this into a lightly greased 9×13 inch oven-safe baking dish. Top with cornflakes and an additional sprinkle of shredded cheese.
  3. Cover with foil. Bake for 30 minutes foils on. Remove foil and bake for an additional 15 minutes with the foil off. Keep an eye on cornflakes so they don’t burn.
  4. Let rest for 10-15 minutes. Then garnish with parsley, chilli flakes, green onions, or tomatoes and serve. Enjoy!

3. Parmesan Potato Casserole

Garlic Parmesan Mashed Potato Casserole makes the perfect dish for a luncheon and a picnic.

Ingredients

  • 3 lbs potatoes scrubbed, peeled and diced into 1inch cubes
  • 5 garlic cloves, whole
  • 1 teaspoon kosher salt (to the season put in water for the diced potatoes)
  • 4 tablespoons unsalted butter
  • 1 cup whole milk
  • 1 3/4 cups parmesan cheese, shredded and divided
  • 1 teaspoon black pepper freshly ground
  • 1.2 teaspoon kosher salt

Instructions

  1. Using a sharp knife, chop the scrubbed and peeled potatoes into 1” cubes.
  2. Fill a large saucepan with water, then add the potatoes to the water. Place the garlic cloves in the water, as well.
  3. Season the water with a teaspoon of salt.
  4. On the stovetop, heat the water and potatoes over high heat and bring to a boil. Cook until the potatoes are fork tender, about 20 minutes. Drain the potatoes, and place them back in the saucepan.
  5. Measure out the butter, milk and 1 cup of parmesan cheese on top of the potatoes.
  6. Using a hand mixer on a low speed, slowly blend the ingredients until smooth and creamy. Season the potatoes with salt and pepper.
  7. Preheat the oven to 350°F. Spray a 9” x 13” baking dish with nonstick cooking spray, and set aside.
  8. Transfer the mashed potatoes into the prepared baking dish. Sprinkle the additional cheese on top of the casserole.
  9. When the oven is preheated, transfer the casserole to the oven.
  10. Bake for 25 minutes, then turn up the heat to 425°F. Bake for an additional 15 minutes, or until the cheese has browned.
  11. Remove from the oven, and let cool slightly. Serve warm, and enjoy!

This easy-peasy recipe can be made without any fancy ingredients making it a perfect option for when you are in a hurry.

Ingredients

  • 2 lb bag frozen hash browns
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 stick butter – melted
  • 2 cups grated cheddar cheese
  • salt & pepper to taste
  • 2 cups corn flakes
  • 1 stick butter – melted for topping

Instructions

  1. Preheat over to 375 degrees.
  2. Mix the first 6 ingredients in a large bowl. Add cheesy potatoes to a 9×13 baking dish.
  3. Melt 1 stick of butter and pour over cornflakes in a small bowl – mix well.
  4. Add cornflakes mixture evenly to the top of the casserole. Bake uncovered for 35-40 minutes until casserole is hot and bubbly.

Ingredients

  • Nonstick cooking spray, for greasing the baking dish
  • 6 large potatoes
  • Pinch salt
  • 1 cup milk
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup (1/2 stick) unsalted butter
  • Pinch garlic salt
  • Pinch freshly ground black pepper
  • 2 cups grated Cheddar

Instructions

  1. Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  2. Peel the potatoes and cut them into 1-inch cubes. Boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.
  3. While the potatoes boil, mix the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of cheese. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.
